Zamosc has a multicultural and multinational history. Poles, Armenians, Greeks, Jews and Scots had lived here together peacefully for centuries. Naturally this influenced the local cuisine, and luckily some of the flavours and varieties stood the test of time. Let your taste buds do some exploration. Try the unique dishes, some of which vary according to season (wild mushroms), and discover new tastes (buckwheat).

For tourists tired after the whole day of sightseeing, Zamość offers many pubs, cafes and restaurants. The owner of "Green Pub" and "Senator" hotel is Witold Paszt - lead singer of once famous pop group "Vox", who was born the city.

Some of the local culinary delights can be sampled even on the tightest budget.
In any grocery for less than 5 zl you can buy traditional local food and drink.
Ask for mineral water Zamoscianka, buttermilk, or beer Zwierzyniec (bottled NOT in canned).
The drinks will go very well with Zamosc famous specialty - cebularz - (onion bread), available at any bakery, often still hot. If you prefer something sweet then the poppy-seed cake (makowiec) or pastry stuffed with sweet jellies (paczek) are an absolute must. http://zamosc.is.wonder.pl/obrazki/flaki.jpg
For a more substantial meal you can't go past Zamosc beef tripe (flaki zamojskie) - a hearty meal for a cold day. It is sold ready-made in cans, all you do is heat it up.

You can have all this in a restaurant, and of course much more.
Specialty soups:
red borshch - clear beetroot soup
white borshch (zurek) - sourdough soup with sausage and potatos
cold borshch (chlodnik) - creamy beetroot and vegetable soup served cold
wild mushroom soup (grzybowa)
sauerkraut soup (kapusniak)
gherkin soup (ogorkowa)

Main courses:
Pierogi - stuffed dumplings with meat, sauerkraut and mushrooms, fruit, or cottage cheese and potatoes. They are served cold, hot, boiled, fried, with or without sour cream.
A specialty of the Zamosc region (Roztocze) is:
Pierog bilgorajski - buckwheat and cottage cheese pie
Pierogi ruskie - ravioli like stuffed dumplings with potato and cottage cheese. They taste great with finely chopped pork crackling and fried onion or sour cream.
Bigos - a stew made with cabbage, smoked sausage, various meats, and sometimes also wild mushrooms.
Golabki - cabbage rolls stuffed with rice, meat, or wild mushrooms
Nalesniki - pancakes rolled with meat or cottage cheese or cabbage and mushroms or sweet fruit jelly.
Placki ziemniaczane - potato pancakes with sugar or sour cream
Pyzy - boiled potato dumplings, sometimes filled with meat

For a traditional salad you can have sauerkraut or gherkins.
A glass of mead (dwojniak, trojniak, or czworniak) or a fruit liqueur (nalewka) will be a perfect finish to a meal in Zamosc.
